In my 16 years of living in the UK, I’ve not tasted a dish that transported me straight back to the noisy, comforting streets of my native Penang in quite the way that this Assam Laksa from Laksamania did.

This was my favourite dish growing up, a hard-won honour when you come from the land of Char Koay Teow, Hokkien Prawn Mee, Nasi Kandar, and other classic Penang dishes, and a small part of me had feared that moving abroad would have meant not being able to eat it anymore.

I’d never have believed I’d be sitting in my London home, slurping down laksa rice noodles cooked seconds before consumption, with just the right texture (and feeling pretty proud of myself for getting them just right), sweating profusely from the deep chilli heat in the redolent broth full of the rich fish fragrance from the hae kor (prawn paste).

I had to be stopped from licking the bowl in front of the kids (I waited till their backs were turned). The tears in my eyes are from the chilli, not from nostalgia – honest!
